Dairy products
Dairy products can be used in a ketogenic diet, but there is a big difference between fatty and lean varieties. Always check the declaration for fat, protein and carbohydrate.
Cheese
Fatty cheeses such as cheddar, parmesan, gouda and cream cheese are good fat sources with little carbohydrate. They can be used in cooking, as snacks or in sauces. Weigh accurately – cheese has varying fat and protein content.
Cream and sour cream
Heavy cream and sour cream are useful fat sources. They are used in sauces, soups and desserts. Avoid light varieties, which have too much carbohydrate and too little fat.
Butter
Butter is a pure fat source with little carbohydrate. It can be used for frying, in sauces and as a flavor enhancer. Weigh accurately.
Milk and yogurt
Whole milk and yogurt contain more carbohydrate (lactose) than cream and cheese. They are used in small amounts or avoided, depending on the individual plan. Low-fat milk and low-fat yogurt have too much carbohydrate.
