Nuts and seeds
Nuts and seeds are fat-rich and can be used in moderate amounts. They also have some protein and carbohydrate, so they must be calculated carefully.
Nuts with little carbohydrate
Almonds, walnuts, Brazil nuts, pecans and macadamia have high fat content and relatively little carbohydrate. They can be used as snacks, in baking or as garnish. Weigh accurately – the carbohydrate content adds up.
Nuts with more carbohydrate
Cashews and pistachios have more carbohydrate and are used in smaller amounts. Peanuts (actually a legume) have moderate carbohydrate content. Check the declaration and weigh.
Seeds
Chia seeds, flaxseeds, sunflower seeds and pumpkin seeds can be used in small amounts. They contribute fat and fiber. Ground flaxseeds can be used as a binder in ketogenic baking.
Nut flour and nut butter
Almond flour and coconut flour are used in ketogenic baking instead of wheat flour. Nut butter (almond, peanut) can be used as a fat source, but check that it is without added sugar.
