Sauces
Sauces are a practical way to add fat to a ketogenic meal. A good sauce can elevate a simple meal and make it more appetizing, especially for children.
Hollandaise and béarnaise
These sauces are naturally ketogenic – they consist mainly of egg yolk and butter. They are good fat sources and can be made in the amount needed to hit the ratio. Weigh butter and egg yolk accurately.
Butter and cream sauces
A simple sauce of butter, cream and a little stock is both good and flexible. Let the sauce reduce a little to concentrate the flavor. Adjust the fat amount with more or less butter/cream to hit the ratio.
Mayonnaise
Homemade mayonnaise from egg, oil and a little mustard is an excellent ketogenic fat source. Use an immersion blender for best results. Store-bought mayonnaise can also be used – check the declaration for carbohydrate content.
Thickening sauces without starch
Regular sauce is thickened with starch (cornstarch, wheat flour), which is rich in carbohydrates. In a ketogenic sauce, you can thicken with egg yolk, cream cheese or by reducing the cream. Use a little xanthan gum if you need extra thickness without carbohydrates.
