Frying and boiling
Frying and boiling are the most common preparation methods in a ketogenic kitchen. Here is how to do it right.
Frying in fat
With a ketogenic diet, the fat in the pan is part of the meal. Use butter, oil or a mixture. Medium heat prevents the fat from burning while the meat or vegetables are fried evenly. Turn the food regularly for even frying.
Boiling vegetables
Boil vegetables in minimal water, or steam them over water. Always weigh the vegetables raw before boiling. Boiling time: broccoli 4–6 min, cauliflower 5–8 min, green beans 6–10 min. Test with a fork.
Fat that disappears in the pan
When frying meat, some fat can run out and remain in the pan. If this fat is part of the meal (for example in a sauce), include it in the calculation. If it is discarded, subtract it from the original fat amount.
